Zucchini Parmesan
2 large zucchini, thinly sliced
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
1 (16 ounce) jar spaghetti sauce
2 cup shredded mozzarella cheese
Parmesan Cheese
Preheat oven to 325 degrees.
Sautee the onion, zucchini and garlic until tender.
Pour in the spaghetti sauce.
Top with mozzarella cheese. I mix in a little parmesan cheese with the mozzarella.
Bake for about 25 minutes or until cheese is how you like it.
I like to serve it over penne pasta. It's yummy! =)
