Here ya go...

Ingredients:

1 lb. bacon, cooked in microwave until crisp, then broken to small chips
1 1/2 to 2 1/2 lb. raw, peeled shrimp
1 lb. sliced smoked sausage (your favorite)
1 can beef bouillon soup
1 can French Onion soup
1 8 oz. can Tomato Sauce
1 stick Butter
1/2 cup chopped bell pepper
1/2 cup chopped parsley
1/2 cup chopped green onion
1/2 cup chopped celery
1 can water chestnuts, drained and chopped (optional)
1 small jar/can of mushrooms
2 cups of Uncle Ben's converted rice
2 cloves of crushed garlic
1 Tablespoon (optional) of Tony's Creole seasoning

Mix together in a oven roaster (disposable aluminum roaster works great)

Cover with aluminum foil and bake at 350 degrees for 1 1/2 to 3 hours until rice is done.

This is such a good idea. I will be back with recipes--smoothies for starters.
Oh my ! That Jambalya recipe has me drooling !

Hunter loves it because he loves shrimp and rice both.

But what he is missing the most is my shrimp gumbo. I absolutely must make a trip to the Bayou and purchase 50 lbs or so to head, peel and put in the freezer.

Hunter says that I make the BEST gumbo, and I guess I should make good gumbo. My Dad was really the BEST at cooking gumbo.

But warning... If I give you the recipe, you will need a gigantic pot and lots of quart freezer bags. The stuff keeps great in the freezer and all you have to do is heat it up in the microwave.

I miss my vegetable garden and okra most of all. I have some great recipes for okra!

OK, this recipe is not necessarily mouth watering but it will last and last. We call it a 'Bible Meal' because it just never seems to diminish--we've caught ourselves still eating it on day 4 and wondering when it would ever finish. It is simply Peas & Beans(over rice). We jokingly call it Beas & Peans because inevitably the day came when that it how one of us mistakenly pronounced it and the name stuck. So, if you want an economical meal that will feed you for days, here goes:

1 Chicken (baked, broiled or somehow cooked)
2 -15 oz. Cans Zesty Tomato Sauce(or 'unzesty' if you don't feel like being zesty)
2 cans of peas or 1 bag frozen peas
2 cans of green beans or 1 bag frozen green beans

In large pot, dump the 2 cans of tomato sauce, 2 cans peas, 2 cans green beans. IF you use frozen veggies, dump them in but add water ---not too much or it will be watery- but add incrementally, and stir slowly each time you add, to your desired sauce thickness. (You can regulate the veggies by eye as well).
Pick the cooked chicken into pieces and throw in pot.
Put pot on medium heat and cook until frozen veggies are as desired or less time for canned. Stir occasionally.
Try adding basil: basil and tomato sauce are great together !

Prepare a pot of rice.

Serve Peas & Beans over rice (for the next 4 nights ) !
