My serious gardening days have been somewhat limited by disability but I still do what I can.

I am working on a indoor project a cookbook for home vegetable gardeners and here is where I need your help I am trying to collect 3 or 4 good recipes for each garden vegetable.

If you have some good recipes please send them along and indicate if you would like your name and home town included as a contributor.

Your help is appreciated.


I have completed a manuscript for a cook book on cooking shrimp (400+ recipes) and it is almost ready to be submitted to the publisher but if you have an unusual recipe for shrimp I may be able to use that too.

Oh, Jim!

Now you have 'gone and done it!' You have made me so hungry for home grown veggies and seafood. I miss both.

I have some recipes that I can share with you, but you will have to be patient. I am studying for the Praxis II for Math.

I have this fabulous marinated cucumber recipe, but I modified it because I like pickles crispy. It's a combination of refrigerator pickles and marinated pickles, but I use burpless cucumbers (from the garden.

I also have some neat recipes for okra and some recipes I can share for seafood dishes (from the daughter of a shrimper).

What FUN to write a book!!!!

Fun yes but like landscaping and running a nursery also a lot of hard work. Just not as much heavy lifting.

Any and all help is appreciated.

HI Jim,

Here's my favorite Squash and Zucchini Casserole Recipe

I make it every year at Thanksgiving.
(It is not my own personal recipe...I did not make this!)
Wish I could take credit for it......haha

2 cups yellow squash, sliced
2 cups zucchini, sliced
3/4 cup onion, chopped
1/2 cup carrots, grated
1 cup sour cream
1 can cream of mushroom soup
1/2 tsp oregano
3/4 cup grated cheddar cheese
1/2 stick of butter (I use margarine)
1 pkg stuffing mix (like Pepperidge Farm)

Boil squash,zucchini, onions, and carrots until tender. Drain, and transfer to bowl. Add sour cream,soup, oregano, and cheese. Mix. Transfer to casserole dish. Melt butter and add the stuffing mix. Sprinkle the butter stuffing over casserole. Bake at 350 degrees for 45 minutes.
